Not to read too much into a fictional universe, but given that they have artificial gravity in the BSGverse, they'd be silly not to use that tech to mitigate G forces in the fighters (if it was practical from a size/mass/energy use perspective). However, we know that they don't do that (at least, not 100%) since Starbuck's ability to handle G forces was a plot point when she hurt herself once, IIRC. So it's possible they don't use it, or that it's simply impractical on anything the size of a Viper, or that it can't generate enough to fully cancel out the G forces.
All that aside, I'd be amazed if this thing did more than extract the existing orientation data and feed that to the sim, given that that data is already available with scripts or sexps. Trying to simulate forces in space using earth's gravity would feel entirely wrong 99% of the time.
