To be fair, there is a better/justified reason for astronomers calling every element heavier than helium a "metal", and it's because those heavier elements didn't exist after the Big Bang (except lithium, but in trace amounts).  Rather they all formed later on by nuclear fusion within stars, so we use the term "metallicity" to define the concentration of those heavier elements within stars/nebulae/etc.  This definition is useful because it helps us determine the age and other properties of the object in question.  For instance we discovered (unsurprisingly) that metal-rich stars have a higher chance of forming more and heavier planets.

And besides, as far as a star is concerned it makes no difference if an element is a true metal or not -- it's just a bunch of soot.   Chemistry and metallic bonds be damned.
