how do i install the extra campaigns? copy the .vp s to the MediaVPs_3612 folder? or everything in the campaign folders over to the vp folder?

No, under no circumstances ever do that. Select the mod folders in the launcher, using the mod tab.

That is, if you selected everything with the FSO Installer, the other campaigns are already "installed". You just need to select a mod FOLDER with the Launcher, and then the appropriate campaign from the in-game Campaign Room.
